Palazzo Rotati's apple pie
There are some smells that make us feel instantly at home. Freshly baked apple pie is certainly one of them.
At Palazzo Rotati, we love making our own desserts for breakfast . This apple pie is one of our simplest and most popular recipes : soft, wholesome, and perfect for enjoying in the morning with a cup of coffee or tea.
Today we want to share the recipe with you, so you can take a little taste of the Palazzo Rotati atmosphere home with you.

Ingredients
- 3 or 4 apples
- 130 g of soft butter
- 3 eggs
- 150 g of sugar
- 200 g of flour
- 15 g baking powder
- 30 g of brandy, optional (I use Moretta)
- 1 pinch of salt
- Butter and flour to prepare the cake pan
- Powdered sugar for decoration, optional
Preparation
Preheat the oven to 180°C .
Butter and flour a round cake pan about 26-28 centimeters in diameter. Alternatively, you can line the bottom with parchment paper.
Peel the apples, cut them into quarters and remove the core and seeds.
Using a sharp knife, make a few parallel cuts in each apple quarter, being careful not to cut all the way through. This will allow the apples to open slightly during cooking, creating a beautiful fan effect.
In a large bowl, mix the softened butter and sugar together using a whisk until the mixture becomes soft and creamy.
Add the eggs, one at a time, stirring constantly. Add the brandy, if desired.
Sift the flour and baking powder together and gradually fold them into the mixture. Add a pinch of salt and continue whisking until the mixture is smooth, creamy, and free of lumps.
Pour the mixture into the cake pan and level it gently with a spatula or the back of a spoon.
Arrange the apple quarters on the surface, scored side up. Press them lightly into the dough, leaving them clearly visible.
Bake the cake in a preheated oven at 180°C for approximately 30 minutes .
Before removing from the oven, check for doneness by inserting a toothpick into the center: it should come out clean. Every oven is different, so if necessary, continue baking for a few more minutes.
Let the cake cool before removing it from the pan. You can finish it with a light dusting of powdered sugar.
Our advice
This cake is delicious served slightly warm. For even more flavor, you can add a pinch of cinnamon or the grated zest of an unwaxed lemon to the batter.
