Crescia of Easter Marchigiana
Our recipe
Since it is Holy Week , I thought I'd start this recipe page with the traditional Easter Crescia which is made in almost every home this week .
We also made it at Palazzo Rotati to accompany breakfasts at this time of year.
But you can always eat of course.
Some bakeries in the city make it all year round .
So my recipe is passed on to me by my mother-in-law Carla Maria who is no longer here but who left me many recipes that are true treasures .
I have the pleasure of sharing them with you.
Easter grows
1 kg of flour
200 g of grated parmesan
100 g of butter
4 tablespoons of olive oil
1/2 glass milk
A little bit of salt
8 eggs
1 sachet of saffron
100 g brewer's yeast
Dissolve the yeast with the milk and pour into the flour together with all the ingredients. Knead.
When you have finished kneading (about 10 minutes)
Add 100g of diced pecorino or Emmental to the dough.
Place in a deep pan and leave to rise for at least 3 hours.
Bake at 170/180 degrees for approximately one hour and ten minutes.
