A COFFEE ' "BORN FROM THE SEA "
This week, thanks to the beautiful day, I gave myself a morning walk to the port of Fano.
For those who have never been around here, I'll tell you a little bit.
Fano is a fishing and clam port that during the weekend they are moored in their place waiting to take off again on Monday morning, leaving the still body of water behind them.
But even when the boats are absent for me it is always a sight to walk the harbor and along the canal for the rainbow of colors that appears before me. Yellow, pink, red, green are the houses of the fishermen of Fano who decided to color them so to recognize them when they returned home and there was fog.
And it is precisely on cold winter days that the Fano sailors invented Moretta, a correct coffee with a particular recipe, typical of Fano. The Moretta Fanese was born, in fact, among sailors and fishermen to warm up and reinvigorate themselves at work.
In times past, poverty led to avoiding waste. Therefore the leftovers of the advanced liqueurs were collected and it was thus that the recipe of Moretta was born which wants, in fact, a mixture in equal parts with Varnelli or Mistrà (anise liqueurs), rum and brandy. The liqueur must be heated with sugar and a zest lemon until the sugar is dissolved. The espresso is then added making it drop gently so as not to mix it with the liqueur and to keep the three layers, from the bottom: liqueur, coffee, coffee foam. Obviously it should be served in a glass cup (better in a smooth glass, than those from a tavern) to see the three layers.
It is impossible to resist this drink with a bitter and at the same time sweet taste, a ritual of the Fano sailors who love the three liqueurs which, I like to think, was created in this way to satisfy the tastes of those from whom it was invented.
And his name? The old sailors say that he was inspired by a beautiful bartender who worked at the port bar, a "brunette" who evidently made the imagination of the fishermen who saw her travel.
Today this drink is sold ready even in the bottle, so those who have tasted it at the bar in the port of Fano can also make it at home Or they can give it away to be enjoyed by those who have not had this pleasure.
